Some weeks I NAIL my food prep and some weeks I’m just kind of like “Eh, that’ll do!” This week I nailed it! I’m so excited! I prepped two different meals from the “Everything Macros” cookbook.
I used turkey sausage instead of chicken sausage (that’s what the recipe called for) in the butternut squash/apple meal. Butternut squash is new to me, and it’s pretty good! I’m pretty proud of myself for stepping out of my comfort zone!

For the sirloin kabobs, I added some extra veggies, the recipe only called for broccoli. Next time, yes I’ll definitely be making these again, I’ll precook the onions. They needed more cook time.

I also made up some little caprese salads to go, and roasted some sweet potatoes and Brussel sprouts. I’ll grab the balsamic vinaigrette and add roughly a tablespoon when it’s time.

Each week I make roasted veggies of some sort! I always find myself leaning towards brussel sprouts and sweet potatoes! Why? Because they are so great for you and they taste delish! Sprinkle a little basil, sea salt, pepper, and EVOO, and 25 minutes in the oven and you’re good to go!

I’m extremely excited about my little turkey snack box. It was also from the cookbook! It’s healthy, colorful, and protein packed! Yes, I had to Google “How to boil an egg.” 🤷🏻♀️

Each week is a learning experience for me –
What tastes good?
What is working for me?
What isn’t working for me?
Was this easy to prep or more time consuming?
If it’s time consuming, was it worth it?
I’m learning and that’s exciting! They aren’t always perfect. It’s usually trial and error, but with time, I’ll get where I want to be!
